One-Pot Cheesy Chicken Fajita Pasta 🍝 (easy & healthy meal-prep recipe)

Episode 8 of my “One Pot Wednesday” series is this shockingly easy and cheesy pasta 😍
And YES - it’s nourishing and satisfying and absolutely DELICIOUS. It’s good for your body and your soul 🥰

RECIPE (serves 3-4)
- 1 tbsp Extra Virgin Olive Oil
- 300g Chicken Breast
- 1 Red Onion
- 2 Bell Peppers
- Seasoning: 1 tsp Salt; 2 tsp Cumin; 2 tsp Paprika; 1/2 tsp Chilli Powder (or use a Mexican spice mix packet)
- 2 tsp Garlic Powder or Lazy Garlic
- 200 Dry Pasta
- 400g Chopped Tomatoes
- 400ml Chicken Stock
- 60g Cream Cheese
- 125g Mozzerella
1. Slice your chicken, onion and bell peppers.
2. Add some EVOO to a pot and the add your chicken, onion and peppers along with garlic and seasonings.
3. Cook this for 5-10 minutes until veggies have softened then add your chopped tomatoes, stock and dry pasta.
4. Mix this well then cover with a lid and leave to simmer on medium heat for 10 minutes.
5. Mix in the cream cheese then top with your Mozzerella. Cover with the lid again for 5-10 minutes until the cheese has melted.
6. Add some spring onion or coriander and serve with a side salad for freshness ❤️
