One-Pot Chicken Fajita Pasta

Here is what you'll need!

Serves 3-5

INGREDIENTS
3 tablespoons oil
3 chicken breasts, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
1 teaspoon salt
1 teaspoon pepper
1 tablespoon chili powder
1 tablespoon cumin
1 tablespoon garlic powder
5 cups milk
4 cups penne pasta
1 cup pepper jack cheese, shredded

INSTRUCTIONS
1. Heat oil in a large pot over high heat
2. Add chicken and cook until no pink is visible, then take the chicken out.
3. Add the bell peppers and onion, cooking until the onion is translucent.
4. Add the chicken back to the pot with salt, pepper, chili powder, cumin, and garlic powder, stirring until evenly coated.
5. Add the milk and the penne, stirring constantly to prevent any pasta from sticking.
6. Cook for about 8-10 minutes until pasta is cooked and the milk has reduced to a thick sauce that coats the pasta.
7. Add the cheese and mix until melted.
8. Serve!

I made it it turned out amazing!!!! My boyfriend loved it. Here are some tips Season the chicken to your liking before cooking it and the peppers while they are cooking, pre boil the penne pasta for like only 4mins and only use 3 cups of milk instead of 5

Made this and it turned out perfectly. I Half cooked the pasta first.. and instead of 5 cup of milk i used 2

Made this today. As everyone suggested I marinated the chicken with the same spices, cooked the pasta first, added some oregano, cheddar and a splash of Worcestershire sauce. Was delicious. Loved it, The whole house smells of this and I had to resist eating it in one go.

I have made this many times. It’s so easy to make. I don’t remove the chicken, I let it be & add the rest as it is. Really yummy as well. One of my go to pasta dishes!

So I just made this, and honestly its really good. I used a little less than the tablespoon of Chilli though - it was spicy enough with half that. And next time I'll boil the pasta for a few minutes. According to the box it needs a cooking time of 11 minutes and in the whole mix, going in dry, took about twenty.
All in all it was really good!

made this tdy & loved it! Changes I made:
Added smoked paprika along with the mentioned spices (life-changing trust me), used 2 cups chicken stock 1 cup heavy cream instead of milk, boiled pasta before hand (al dente) & used a mix of cheddar & mozzarella not gruyere. You can thank me later! & if you guys want a better colour I suggest trying Kashmiri Chili powder instead of the regular kind (it has a more pigmented & bright colour)

I make it exactly how it is in the video and it turns out great every time! I don't change a thing and I don't cook the pasta beforehand. I don't cover the pot while it's cooking so it helps to evaporate the milk. Yeah, it takes a little longer to cook but so worth it. This is my daughter's favorite dish.

Made this for dinner last night! SOOO GOOD!! you do not have to precook your pasta! this works just like it says it should, just make sure you keep stirring the pasta around and you shouldnt have a problem, do not let the pasta just sit in boiling milk they will burn at the bottom or stick. I didnt have any pepperjack and used a mexican cheese blend and was still really good. Great EASY RECIPE! & delicious! :)

I made this for Iftar today - I was so scared it would turn out bad as some have expressed in the comments since the whole family has been fasting the last 20 hours - but it turned out deee-li-cious! So creamy and tasty👌🏻 I did make some changes to the recipe though. I precooked the pennes before adding them to the mix, and I didn't add as much milk as the recipe says - I added maybe about 2-3 cups only, which was sufficient. Only con was that I had boiled the pennes too much before hand, so they began to "fall apart" a little when the dish was ready. I'll try to boil them max. 4-5 minuts next time. Can't wait to try it again🙌🏻

6 years later! I made this and it turned out amazing! My mum, dad and everyone loved it. Mum and Dad was like “You’re the youngest but you made it like a chef!” I was so proud HAHA. If you haven’t tried it yet, try it! It’s really good. I’m going make it again. Lots of love from New York.

anyone planning to make this, i just made it and it's reallyyy good but i would suggest pre-cooking the pasta and leaving it to simmer a bit longer than it says, just be sure the milk has thickened.

I just made this and it was so so good. I only used one cup of penne and one cup of milk and it worked out great!

I made this and to be extra flavorful I added way more amount of seasoning and I added some onion powder season salt and taco seasoning so it's good💯

I just made this and my sauce was white and a tad watery. Make sure you cook the pasta first and use less milk than the recipe calls for.

Review: it turned out really good! Whilst I was cooking I was kind of in doubt as the color wasn't identical to the color in the video. But after a few minutes it changed. I'm not a very great cook, but this I can actually succeed with! Thank you for this recipe!

I made this last weekend it was DELISH!! Of course I had to put my own spin on it… and it was sooo yummy!! 😋 mostly followed the recipe…I used 1 lb penne, 2 chick breast, + 2 heaping tablespoons of sun-dried tomatoes in oil, chopped, One can of coconut milk, 2 cups of chicken broth. One cup of shredded pepper jack cheese was a great finish for creaminess, sprinkle with parsley. Definitely will make this on the regular it lasted for 3 full meals for 2 people! It’s even better left over. 😊😋
