Every time I watch Bruno make bread, I am amazed. It makes me want to continue my profession as a baker. Eventhough I'm still an apprentice. But, seeing Bruno make beautiful bread makes me want to continue my passion. So, to you Chef Bruno. I say thank you for being an inspiration!

Bonjour Bruce! I made your bread last night and baked it today as flatbread, drizzled with olive oil, chives and thyme. It’s simply the best recipe I’ve ever used for bread - the bulk fermentation process creates an incredibly delicate interior, and the crust is amazing. Thank you Bruce!
