For anyone who's too impatient to do this yet still really wants to make croissants...just freeze your 250g block of butter then grate it up into shreds and then freeze them again. That way you can just spread it out on your dough and fold it several times as the butter stays cold, without having to re-freeze it. It works a treat!

made your croissants today!!! so good! i let the dough get too warm with the first half of the croissants made, so i put the other half of the dough in the freezer before cutting and those came out perfect!! ty

I had to make these croissants twice, since they were a success with my friends.
The second time, I made one batch with a nutella type filling called Chocolinette, which I brought from Paris, and the other batch with pesto-parmesan filling. They were all gone in a blink of an eye!!
Next time I will try your nutella recipe.
