The third in our flourless egg white range, these tortillas are soft when warm and firm up as they get cold to about the same firmness of a regular tortilla. So they would be great to shape them how you like when warm...perfect for tacos. In this video we show you the results of the experiment and the various tests we put them through.

Taco Shells/Mini Tortillas - Serves 5
Nutritional Information/Serve:
Cal: 148 | Net Carbs: 0.6g | Fiber: 0g | Total Carbs: 0.6g | Fat: 12g | Protein: 11g

Large Tortillas - Serves 3
Nutritional Information/Serve:
Cal: 246 | Net Carbs: 0.9g | Fiber: 0g | Total Carbs: 0.9g | Fat: 20g | Protein: 19g

Ingredients:
180g Powdered Cheese (equates to 2 cups less 1 tbsp)
4g/ 1 tsp Baking Powder
3g/ 1 tsp Gelatin Powder
6g/ 2 tsp Xanthan Gum
2 Egg Whites (1/4 cup or 60g)
Pinch Cream of Tartar

Vegan Substitutions:
Use Almond Flour to replace the Cheese
205g/2 cups Almond Flour
Use Agar Agar to replace the Gelatin
You will need a little fat so the dough is not dry, about 1 tablespoon.

I skip the fluff the egg whites. I’ve been doing this for years I’m surprised more people haven’t cut onto it however I don’t take the yolks out because that’s where truly all of your nutrition is. If you’re going to eat an egg eat the yolk that’s where the love of God comes from! Nice video

I would like to add that you can put the tortilla in the pan with the parchment paper on the BOTTOM. Cook the first side, flip them over together, and the paper will peel right off when the tortilla is ready. This method can also be used for many other delicate foods like breads, pancakes, eggs, fritters, fried cheese, etc, or even if your pan isn't nonstick

I Made them today...they aré fantastic The Best in keto tortillas for me!
I use cotija cheese instead of parmesan. It Is cheaper AND worked beatifuly.

Made these today ………. first one was a disaster 😵‍💫, used my tortilla press and covered it with baking paper (not a good idea) the mix stuck and I had to scrape it off. I flattened it out and still cooked it, tasted great just looked nothing like a tortilla 😂.
Then I covered the press with cling wrap …….. what a genius I am 🤣😂🤣, this worked a treat and ended up with tortillas that actually looked like yours. So happy, so now we can have pulled pork with salad in wraps for dinner ….. yay!!!

OMG, I made the spinach and egg tortilla right away and boy, they taste delicious 😋 😍. I added my favourite spices to the mixture then blended it all, cooked using 1 x calorie spray olive oil...yummy. Better than the flour tortillas in my opinion ❤❤. Thank you much 👏🏾👏🏾👏🏾🙏🏾

Had to add another comment, I used smaller circles in my breakfast sandwich maker instead of English muffin and had the most amazing sausage n egger breakfast sandwich... wish I could upload a photo of it! The possibilities are endless 😊 Thanks again Mel

I was surprised how well these turned out. Very flavorful and good texture. Hardest part was just getting them into the pan. I didn’t have any xanthan gum so I just used 1 Tbls of gelatin for for this recipe and it worked fine.
