Developing a high hydration dough (120%) through folds and then making garlic bread out of it.
Recipe:
260g Levain or Poolish
575g Bread Flour
710g Water
16g salt
6g Instant yeast
24g olive oil

That's crazy. Even making 70% pizza dough was a challenge for me and you're at 120%.

I've been a huge fan of the stretch & fold method for years, but always had trouble using it with high hydration doughs. I never considered using a large container with high sides like you do here, though - definitely going to apply that knowledge in the future. Thanks!

Absolutely beautiful and terrifying at the same time 🤣 currently going through 30 minute intervals of stretch and folds with an 85% hydration sourdough. Hard to believe it'll ever behave!!

Wow this video took me back. I remember watching my mom make mess with this kind of dough when I was little. It’s super sticky but it always turned out fluffy and crunchy and the same time.

Oh my . That looks so good. I make a batter bread with that texture. Same fough( I think) but I just put it in the pan and bake it. I’ll try your way next time. Thank you.
