Making a very wet ciabatta dough. They still uses a natural sourdough Levain and Poolish. This was a little past the maximum this flou can handle, but it’s fun to push the limits!

I just found your channel a day or two ago and saw you do 110% hydration dough and it inspired me to try a 100% hydration dough for my sourdough pizza for dinner tonight and I heard it was great! I'm going to try it for a loaf and keep moving up if it works out. Very cool and very inspiring!
