Smoked NY Strip Steak with Bourbon Butter | Masterbuilt Smoker

Today we’re smoking a NY Strip Steak in the Masterbuilt smoker and making a Bourbon-Compound Butter. This is the same idea as the reverse-sear method. We are using our Masterbuilt Electric Smoker with some wood chips then moving our steak to high heat on the grill (you could also use a cast iron skillet on your stove).

Ingredients
• 2 NY Strip Steaks, about 2 to 2.5” thick
• Stubb’s Steak Rub (you could substitute Kosher Salt and Cracked Pepper)
• 1 stick salted butter
• 1 green onion top (green part), chopped
• 1 tbsp chopped parsley, chopped
• 1 tsp smoked paprika
• 1.5 - 2 tbsp Weller’s Kentucky Bourbon

Instructions
1. Set the butter out on your counter at room temperature until it softens.

2. Add the butter, green onion, parsley, paprika and Bourbon to a bowl and mix well.

3. Move the butter mixture to plastic wrap. Roll up in the plastic wrap then place in the refrigerator until the butter hardens.

4. Set the Masterbuilt Smoker to 225 degrees F and add pecan wood chips.

5. Place the NY Strip steaks in the smoker.

6. For medium rare, remove the steak when it reaches 129 to 132 degrees F. This will take a bit less than 1 hour depending on your actual smoker temperature and outside temperature.

7. Move the steaks to high heat on the grill and sear both sides. This only takes about 2 minutes per side.

8. Remove the steaks from the grill and cut a couple of slices of the Bourbon Butter and place on the steaks.

9. Let the steaks rest for 10 minutes.

10. Serve.

i did a chuck roast in the masterbuilt smoker last week. put famous daves dry rub on it, put it on a wire rack above a plate and placed in the fridge for three days. the juice pooled onto the plate making the steak a bit firmer and concentrated.
placed in the middle rack of the smoker, using jack daniels wood chips. smoked at 210' for almost 4 hours till the internal probe said 155'.
took out of the smoker, tented it with foil and let it rest.. sliced it thin against the grain.. it was just like butter.. all my friends loved it. made really great sub sammiches..

Attempted this yesterday. Cooked the steaks a bit too long but the flavors were great. Next time I'm going to ask the butcher for a thicker cut if possible.

I was able to pick up a NY strip for FIVE BUCKS! I was craving a ribeye with maple bacon butter but they were $14, and I needed that on good beer so I'm smoking my strip and I might do a quick maple butter sans bourbon (drank it all over the weekend) for sweetness with my Cowboy Rub.

Making this for the second time in a month. Used bone in ribeye the first time but it was just too fatty. Using a couple of nice NY strips tonight for company.
