Marinade Ingredients:
3 lbs porkloin, thinly sliced
3 cloves of garlic, minced
1 tsp ground annato seed or powder
1/2 cup soy sauce
1/2 cup brown sugar
1 cup pineapple juice
1 tbsp grape seed oil (or any neutral oil)
3 tsp water
1 tsp of red food coloring (optional)
**Marinate overnight for best results**
Directions:
• Remove meat from fridge and bring to room temperature.
• Preheat stove to medium high heat. Use a medium-sized frying pan with a lid.
• Add meat to the frying pan along with residual marinade and add 1 cup of water. Cover and cook for 10 minutes.
• Flip the meat over and add 1 tbsp of oil. Cover and cook until liquid has reduced.
• Reduce heat to medium and remove the lid.
• Continue cooking until the liquid has completely evaporated and the oil starts frying the meat.
• Keep mixing until the meat is charred and carmelized. Make sure not to burn the meat.
• Serve with eggs and garlic fried rice (sinangag).
