That brown water is literally just seasonings, dry herbs and peppers, the water is added for the tomato concentrate to break down and spread, this is one of many different techniques the fast cookie cutter pizzerias use because it save time on prep and cuts costs overall for them. (Little Caesar’s, Marcos, Cicis) they tend to use very similar methods for their tomato sauces

I worked at a pizza restaurant for a year. The brown water is just a whole lotta seasoning in water lol. This is perfectly normal and absolutely nothing is wrong with this
