I squeeze out all of the water from the grated potatoes. It makes frying them so much better. If you are afraid of losing potato starch, guess what, add in potato starch instead of flour or matzo meal. It makes it a lot crispier than the water logged latkes this person is making. Also where's the grated onion. It's not a latke without onions.

Is this a comedy? This chick is the one doing it all wrong! The starch from the potato will give the pancake a gooey texture. You need to remove all the starch and get the potato as dry as possible; not to mention she forgot the onion...WTF!?

I LOVED this video. I do a tutorial for a different method - a long strand super crispy latke that is also creamy in the middle (and I do remove the water, but put my starch back in). There are lots of good cooking tips in here, and I totally believe "to each their own" in terms of the style of latke you prefer. Nice overview!

My Nana taught me to drain the water from the potatoes. You let it sit drain off the water the starches in the bottom and then you mix the eggs with that starch. Your latkes come out nice and crispy.

You didn't put any onions in the latkes.... you're doing it all wrong.

I made a lotta latka recipes before but this ones my FAVORITE... I do add onions though

I think this all sounds good based on a chef led cooking class I took. I would skip the second blade in the FP because I don't like it too saucy but rather shedded only. Nice work! Also, I agree, no toppings for me either. Yum!

I don't know what's wrong with all of you, but I really like this woman! She does a nice narrative, and made latkes that I thought looked tasty, and I usually hate latkes.

I remember my teacher from 2nd grade brought in a nonstick grill thing and made latkes for the whole class. It was delicous with applesauce.

This video does not get into the 'recipie' realm, and if you already know how to latke, this is a good freshener on what you should be doing. I always hand shred, but the double run thru the food processor never occured to me - I'm gonna try that. I put a pinch or two of baking powder in my batter....helps make them super
