Simple ingredients, simple steps, and easy to put together, Cilbir is easily one of the most delicious egg dishes from Turkey!
Who knew, a combination of a yogurt base, a soft egg, and a chili butter sauce could make an amazing meal. You can choose any fresh herb that you have, but dill makes the best pairing. For the chili butter sauce, traditionally you use aleppo pepper but a combination of smoked paprika and chili flakes will do as well. This dish pairs well with a toast, or you can have it just like that. If you're serving it to kids, maybe omit the fresh garlic in the yogurt base, and use a sweet paprika for the butter sauce. Give it a try!
Ingredients:
Yogurt base
- 1 cup greek yogurt
- 1 tbsp fresh dill
- 1 tbsp fresh parsley
- salt & pepper
- 1 clove garlic
Chili butter
- 1/2 stick butter
- 1 tsp smoked paprika
- 1 tsp chili flakes
- salt
Poached egg
- Egg(s)
- 1 tbsp vinegar
Steps:
1. Finely chop dill & parsley.
Mix all ingredients for yogurt base.
2. Melt butter on medium heat until light brown.
Turn off heat and add paprika and chili flakes.
Add salt.
Mix well. Skim foam and set aside sauce.
3. Crack egg in a tea strainer over a ramekin. Discard extra liquid.
Add vinegar to water in a deep pot.
Bring water to a low simmer.
Stir to make a vortex.
Gently drop egg in the middle of vortex.
Cook for 3 mins or until you achieve the appropriate softness.
4. Spread yogurt base on plate.
Place poached egg.
Spoon chili butter sauce.
Garnish with fresh herbs.
Serve with toast.
