Oat seed toasties 🌱
Ingredients (1 serving = 6 toasties) :
Base:
• 100g oats
• 200g plant based yoghurt (coconut, soy, cashew, etc.) or Greek yoghurt
• 10g chia seeds
• 30g pumpkin seeds
• A pinch of salt
Toppings (recommended and optional) :
• Cream cheese
• Sprouts
OR (another version, higher in protein)
• Cream cheese
• Avocado
• 2 soft boiled eggs (boil for 6 minutes)
• Salt
• Pepper
• Sprouts
Directions:
1. Preheat the oven to 200°C top/bottom heat.
2. Combine all of the base ingredients into a bowl.
3. Line a baking tray with parchment paper. Add the dough in 6 equal sized portions onto it. Flatten with a spoon and shape them into rounds.
4. Bake for about 25 minutes.
5. After baking, top a few of them (or more) with my recommended or your desired toppings and eat them straight away. Put the other ones in the freezer. In the morning, just toast them in a pan or toaster and you will have a toastie in no time! Enjoy.
