Tom Kerridge has a recipe where the onion rings are given a brief, sweet pickling on the stove, before being battered. Finished off with some smoked paprika.

Best onion rings I've ever had. I'll have to try this method though as well.

If the inner layer of the onions peel off with the batter you can freeze your onion rings for an hour and that makes them peel easily.

The salt and vinegar _macerate_ the onions.
Maceration is a form of heatless cooking for fruits and vegetables.

I love how thick the buttermilk is. It saddens me that I've watched "milk" in the U.S. turn to what is essentially white water over the past 2 decades :l

the problem with cooking onion rings (or such things like that are "battered" like this) is the fact it really does make a mess and re-using the cooking oil is not a good option

I freeze my onion rings before I dredge them. The freezing breaks them down and makes them nice and soft.
