Warm Mediterranean Chickpea Lentil Salad

Thought I’d share my story on why I went plant-based while making this delicious salad. I’ve been eating this salad every week for the past 2 months and still crave it even as the weather is getting colder.

Same, I got diagnosed with Ibs and chronic gastritis and I cut out most
frozen and persevered food and cook 95% home made everything. My stomach heals with that diet and if I go back to my old ways I suffer. I took eating what ever I wanted for granted as a kid. “Let food be thy medicine and medicine by thy food.”

Hi everyone! Thank you for the overwhelming support. Just a reminder for some of the more negative comments I've been seeing, this is my plant-based journey story and I simply wanted to share what worked for me. It does not work for everyone. There is no right way to eat, just do what works for you.

As someone who’s extremely sensitive to textures with certain fears about food, going plant based helped me out a hell of a lot more than I realized because it wasn’t my main reason for doing it initially. But after several years I’ve noticed how much more comfortable I am with dishes that just contain beans, vegetables, grains etc compared to dishes with eggs or meat (I don’t even like egg substitutes outside of baking that’s how much I hate anything with texture resembling eggs) and it gives me a sense of being able to control my food anxieties especially when going out and trying new things. ✨

I just had too much I started seeking vegetables.
Made me feel a hundred times better and even fixed symptoms that I thought was just normal since I've always had them for the longest time.

I'm not completely vegetarian, I still eat a bit of meat and fish every now and then. But it would be easily like months before I eat meat, for like special occasions like parties or events, if I choose.

Conforming myself to become purely veg, left me open to get tempted and finally binge eat because I'll think I'll go back to being vegetarian after this meal or this one cheat day.

But now I'm not limiting myself and am able to choose a largely vegetarian diet without feeling tempted to "cheat" on my diet, because there is nothing to "cheat" on, I can eat if I really wanted to. And I no longer want to eat meat right now.

I went vegetarian because it was a fad in Middle School. Everyone else around me who tried it lasted about 6 months.

It fixed the stomach aches and issues I'd been having since birth in a couple of weeks and I never went back. It's been 15 years.

Same thing happened to me. I was sick everyday for years and had no idea why. Nothing helped and I tried everything. One day my friend told me to try going vegan and even though it was a hard transition at first, it was the best thing to ever happen to me! I never get sick anymore!

Man, this makes me so happy. I'm not even vegetarian myself, but in a world where its normal to see people constantly shilling their magical cures or trying to force the people they know into their own lifestyle, it's just so wholesome and heartwarming to see somebody sharing something worked for them.
"Going plant based won't resolve all the health problems out there, but I'm lucky that I found something that works for me." Hell yeah, you go girl.

It's incredible how altering our diets can alter our health and it seems to be different for everyone. I was suffering with a lot of health issues as well and I had a doctor recommend cutting out certain foods. I've discovered avoiding grain, processed sugar, dairy and starches is what I need! So hard to make such drastic changes but I feel so much better 😭💖 and it's not about foods being "good" or "bad" it's just that my body is sensitive to those foods.

I love how she said "something that worked for me" because as a life long former vegetarian, I was suffering from a lot of deficiencies until I changed to a pescatarian diet. I also eat some chicken now. Never felt better. I have more energy and my chronic fatigue seems to have lessened. So it really depends on the individual.

quick advice : extra virgin olive oil is for raw consumption, like a drizzle when yoi serve your dish
it's not for roasting/sautéing as its got a low smoke point (plus you want to keep all the good nutrients, and it can be pretty pricey !) i'd use sesame oil for wok and vegetable oil or refined coconut oil for roasting and sautéing.
