I will always take cast iron over stainless steel. And never use a fork to pierce a steak. Releases all the beautiful juices. That’s why you let a steak rest for a few minutes before cutting them to eat.

I'm never babysitting my steak by flipping it every minute. Sear all sides and elevate on a rack in the pan in a 400º oven until it's the temp you prefer. No babysitting steak. Yay.

I’ll stick to my cast iron I reckon stainless steel is overrated in my opinion I have a 30cm cast iron and a 32 cm non stick ceramic rock expensive thing and they suit my cooking needs just fine plus one big pot and one small pot that’s really all you need 😅 oh and a decent knife and your pretty much ready to cook for the rest of your life nice looking steak though

That water is not dancing. It’s evaporating! When the pan is hot enough the water will gather into a single ball that will roll around the pan and not evaporate. It’s called the Liedenfrost effect and you’re not demonstrating it here.
