Healthy Emmie’s No-Bake Vegan Maple Cinnamon Munchkins

Ingredients:

DOUGH:
2/3 cup oats (if you're gluten-free, make sure they're certified gluten-free)
1/3 cup cashews
1/3 cup pecans (or just use another 1/3 cup of cashews)
2/3 cup pitted dates (I prefer to buy them with the pits in them, and then take out the pit. These tend to be gooier than if you buy them already pitted - that makes them dry out!)
1 teaspoon psyllium husk (If you don't have this, don't sweat it. But it really helps the dough stick together.)
1 teaspoon maple syrup
1/2 teaspoon cinnamon
GLAZE:
2 tablespoons maple syrup
1 tablespoon non-dairy milk or aquafaba (Aquafaba is the leftover liquid from canned chickpeas. I used this.) 
1/2 teaspoon cinnamon
1/4 teaspoon psyllium husk

Directions:
Soak the cashews for 4 hours. (Or, if you’re short on time, soak them in boiling hot water for 20 minutes.)
In a food processor, blend together the dough ingredients. 
Roll the dough into balls (munchkins) and freeze for 20 minutes.
Make the glaze by whisking together the ingredients.
Dip the munchkins in the glaze.
Sprinkle with more cinnamon (I love cinnamon!) 
Freeze for another 20 minutes, or put in the fridge overnight.
Enjoy! (You can keep these in the fridge in an air-tight container for up to one week.)

I love dates, I love pecans and cashews, and I love oats (raw oats are fine IF they're certified gluten-free). I don't have a clue wottheheck is a "munchkin, " but I think these date, nut, and oat jobbies are damn FINE!

If you want munchkins, eat the munchkins. These types of foods are okay to eat in moderation. This is just a fun way to eat nuts, dates, and oats.

What's the difference in between refined sugar and sugar? They're both sugar. Thanks for sharing. Push life to the edge only takes 2 weeks to stop the craving of sugar
