Episode 34: One of the best things about authentic food, like a Traditional Beef GOULASH, is it’s ability to provide comfort to people. Goulash is originally a Hungarian dish, however it is a very common dish eaten in Slovenia and many other parts of Europe.
There are several different variations — in this episode Michelle takes us on a journey and shares with us her families favourite version. You have to give it a try!

Ingredients
2-3 onions, diced
2 carrots, Chopped
5 cloves of garlic, chopped
3 pounds of stewing beef
1 1/2 - 2 cups of water or Beef broth
3 x Bay leaves
1 1/2 tsp’s paprika (or more to taste)
1/2 tsp pepper
Salt (to taste)
*optional: tomato paste (start with 1 Tablespoon - add more to taste)
2 Tbsp’s of oil

1. Add oil to a large pot. Fry onions on medium temperature until they become translucent.
2. Then add the meat with the onions.
3. Once the meat is slightly browned add in the garlic. Mix until the garlic is fragrant about 30 seconds.
4. Now it’s time to add the carrots.
5. Add enough water or beef broth to cover the meat completely.
6. Give it all a good mix, before adding 3 bay leaves.
7. Add some seasoning: salt, pepper, 1 1/2 tsp’s paprika (or more to taste). *This next step is optional: Add tomato paste (to taste)
8. Mix everything together until really well combined.
9. Cover the pot and lower the temperature. Allow the goulash to simmer on low for 3-4 hours. Stirring occasionally.
10. Serve it along with; mashed potatoes, macaroni, polenta, or my homemade gnocchi recipe, a salad and some fresh bread. Dober tek

My parents (dad is 94 mom is 87) are both Slovenian from Ljubljana and Maribor who emigrated to America in 1955 (myself and 2 brothers were born here in the US).Your recipe is almost exactly like mom still makes to this day, with the only exceptions being she'll sometimes add potato and then some flour to thicken up the sauce. Excellent!

Salt the beef leave it in the fridge over night
Next Chop a Whole Oninon into a medium dice
crush 4 cloves of Garlic
Grab a Can of Tomato sauce
Beef Stock (always homemade but storebought was acceptable)
Vegeta of course!
Then in your biggest stock pot get some olive oil and butter hot place your chunks of beef and lamb fat trimmed saved for coating the bread put it in as high as you can sear both sides of the beef and lamb for about 4 min until you get a good crust remove everything
Sweat your onions and Mushrooms if you want until crispy brown throw in your Paprkia and garlic stir for a bout 30 seconds Add the meat and juices back in and stir vigorously and add the vegeta Then add the tomatoe sauce scrapping up that fond on the pan all the delioucis meat crust simmer for about 4 min letting everyone to get to know each other then add 3 cups of Beef Stock mix it well turn on medium heat always checking it cook for about 5 hours and at the last hour Add about 10 pealed potatoes put in the sauce and cook in there at the last 20 min add frozen peas mix in Serve piping hot into a bowl with good hunk of french bagquette or Italain style bread mash those taters mix it with the sauce and enjoy using bread to scoop up what you don't get with your fork and add salt if you want too
(i tend to tweak it a bit now by adding Siracha at the Meat searing point its got a great flavor)
