It's (usually) considered disrespectful to not give money directly in hand in India. Most common connotation is that you think that the person you are giving money to is beneath you or is dirty. Unless it's due to rush or in service sector with safety glass between the two of you, you usually hand the money directly my hand (of course, unless you're doing digital payments).

I mean, the same goes for a lot of restaurants in the US. They usually give you that small booklet to place your card or cash in once you’re done eating.

You never handed a sever payment in their hand. Normally you get a booklet with the receipt inside. You put your card in and put at the end of the table.
