EASY Japchae Recipe.

This is a modification of the traditional japchae recipe (which you can find in my cookbook):

1 tablespoon extra virgin olive oil
1/4 cup julienned red onion
1/4 cup julienned purple cabbage
1/4 cup julienned mushrooms
1/4 cup julienned red bell pepper
1/4 cup julienned carrot
1/4 cup julienned yellow bell pepper
1/4 cup julienned green cabbage
1/4 cup julienned green bell pepper
2 cups cooked glass noodles
2 tablespoons soy sauce
1 1/2 tablespoon brown rice syrup (or maple syrup)
1/2 tablespoon rice vinegar (or apple cider vinegar)
1 tablespoon sesame oil
1 tablespoon sesame seeds
black pepper

Sautee the veggies in olive oil. Add cooked noodles and then all liquid ingredients. Garnish with toasted sesame seeds and black pepper.

my mom and biological father are both korean adoptees who were pretty heavily separated from their native culture growing up. they introduced me to korean food very early on and one of the first dishes i ever tried was japchae. it's one of my favorite comfort foods now that i'm almost 18 and it brightens my day when i get to have it. my parents are divorced and my father is no longer in my life, but i'll always be grateful that he taught my very americanized mom how important it was for my sister and i to grow up eating the food of our people
