Ingredients
- 230ml grapeseed oil
- 100g greek yogurt
- 4 eggs
- 1 tbsp vanilla paste
- Zest of 1 orange
- 270g self raising flour
- 350g brown sugar
- Pinch of salt
- 2 tbsp ground cinnamon
- ¼ nutmeg finely grated
- 270g grated carrots
- 150g walnuts
- 100g soft butter
- 300g icing sugar
- 120g cream cheese
Method
1. Preheat the oven to 180°C then grease and line 2 x 20cm cake tins
2. In a large mixing bowl, whisk together the oil, yogurt, eggs, vanilla and orange zest.
3. In a separate mixing bowl, add the flour, sugar, salt, cinnamon and nutmeg and mix.
4. Add the dry ingredients to the wet ingredients and mix until just combined.
5. Mix in the grated carrots and walnuts.
6. Pour the mixture into the tins and bake for 25 minutes, or until a skewer comes out clean.
7. Remove from oven and leave on a wire rack to cool for at least an hour before you ice.
8. For the icing, mix together the butter, cream cheese and icing sugar until smooth.
9. Ice the bottom layer then add the top and ice the top as well.
10. Garnish with some more walnuts and enjoy!
