this is pretty similar to our usual carrot cake recipe here in UK, except we use butter, mixed spice and no pecans but possibly walnuts .. it's such a nice cake tho, I love carrot cakee

Can add canned pineapple chunks with the juice (abt half cup), about 1 cup of raisins with assorted nuts (crushed), with raisins and pineapple can cut down on sugar … the cake be more moist and soft…

If you make it again, add some ginger and allspice with the cinnamon. Maybe even some clove if you're feeling more spicy lol.

I’m glad it was better than the worst rated (obviously) but it’s still such a sad recipe, though I grew up with my moms recipe which is the best, it’s got: carrots, crushed pineapple, walnuts, raisins, dried apricots, and sunflower seeds. And to top it off her cream cheese frosting is the best too because it tastes of cream cheese not sugar (we aren’t a frosting family) so the fact we like it and it isn’t too sweet is the best
