How to make a Carrot Cake tray bake!

Carrot cake is my WEAKNESS 🤤 A super moist carrot cake, packed with juicy, plump raisins, topped with a thick and creamy cream cheese icing 🤌 I love it so much!

It’s super easy to make, similar to my carrot cake loaf cake with a few adjustments 🙌

All you need is👇

For the cake:
2 large eggs, room temp
100g dark brown sugar
75g granulated sugar
50ml buttermilk
175ml vegetable oil
225g plain flour
1/2 tsp baking powder
½ tsp bicarbonate of soda
1/4 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
220g carrots (finely grated)
150g raisins

For the icing:
90g unsalted butter, softened
90g full-fat cream cheese
1 tsp vanilla extract
250g icing sugar, sifted

Tin size: 8x8”

Bake 160C (fan) 25-30 minutes or until a toothpick comes out clean

Make sure you let the cake cool before icing it 🥰

220g carrots
150 plum Raisins
Baking tin 8x8inch
Bake for 25 to 30 min 160c

Frosting
90g butter
90g full cream cheese
1Tsp vanilla
250g icing sugar

1) Preheat your oven to 180°C, Gas Mark 4, 160°C (fan).

2) Line an 8x8" baking tin with baking paper.

3) Add 2 large eggs, 100g dark brown sugar, 75g granulated sugar, 50ml buttermilk and 175ml vegetable oil to a bowl and whisk until fully combined.

4) Sift in 225g plain flour, 1/2tsp baking powder, 1/2tsp bicarbonate of soda, 1/4tsp salt, 2tsp cinnamon and 1/2tsp nutmeg and then fold them into the mix.

5) Fold in 220g finely grated carrot and 150g plump raisins.

6) Pour the mix into your baking tray and smooth it out.

7) Bake for 25-30 minutes and then allow to cool.

8) In a new bowl, add 90g softened butter and whisk until creamy.

9) Add 90g full fat cream cheese to the butter and whisk until creamy and smooth.

10) Add 1tsp vanilla and whisk again until combined.

11) Gradually sift in 250g icing sugar and then whisk until smooth.

12) Spoon the mix onto the cooled cake and smooth it out.

13) Enjoy!

I would leave out the raisins and replace them with walnuts.

I’m a carrot cake snob-haven’t found a decent one outside of the USA but this!!!🤩 Ive made this twice now and it’s honestly the most deliciously moist cake. I love that there’s no walnuts on this too as i hate them. The only thing is I end up having to bake for around 40 mins but that may be my oven. My waistline doesn’t thank you but I do 🥰

You could add pineapple it is really good if you like pineapples. Cake looks nice and moist I will definitely try this one but of course to pineapples. 🤗😘

In carrot cake always always always add raisens, walnuts, and I like to add macadamia nuts too.

To all the germans, its way too sweet, i put 100gr of powdered sugar and 140gr total of sugar into the batter and its at the limit rn
