Black salt, especially added towards the end of the cooking process, helps to give it an eggy flavour. You can cut down on the normal salt so it doesn't get too salty. But Ilike it that you cooked the veggies before instead of with the batter. That makes more sense to me too.

Greetings from Bangalore, India.

We use chickpea flour a lot in our daily cuisine. It is a humble ingredient, quite healthy and can be tasty, if used properly.
What you have made is actually a traditional dish called Chilla in abortive India. Or can be compared to Dosa ( like pancake) of South India.

It will look nice, taste nice, but will not taste like egg. Chickpea flour (Besan as we call) simply is not a substitute for eggs.

Having said by itself chilla is a healthy dish, can be eaten at any time. Easy and versatile. You can add any vegetable / herb of your choice and chilla can take that. I mix finely chopped onions, grated carrots, finely chopped cabbage, mushroom, herbs like dill, coriander and min, spices like paprika and turmeric, cumin….classic chilla will also have tomatoes and green chillies. Like I said you can let your imagination work.

Just a small tip. While mixing this flour do not add the required measure of water all at once. Add a tbsp or two of water at first and mix to a thick paste and then add the remaining water. It will be easier to get a lump free batter in no time. Besan is notorious for knotting up.

I did this but in a cast iron skillet. I think i didn't have enough fat in my pan or maybe a nonstick pan is necessary. Or maybe i didn't start lifting it soon enough around the edges idk but it stuck something awful. I'll be experimenting to figure out where i went wrong haha

Indian people use Graham flour which is similar to chickpea flour

what other flours can i use in place of chickpea flour? can i use wheat flour or corn flour?

I do equal parts flour and water (1/3 cup each) but my batter is very thick and chunky compared to yours. When I add water, it falls apart when I try cooking it. Any help is appreciated!

Don't taste it when it's not cooked! It's raw beans, it's going to taste awful!
