Okay so I'm not a vegan and I haven't tried it before but you should try using mushrooms as a vegan Substitute coating it in bread crums maybe using a vegan sauce of choice that you can make or buy so the bredcrums can stick and be fried with oil :D

Ever tried doing seitan and draining the water in it to get that sorta web consistency it takes forever washing to get to that point
