Normally I'm not a huge fan of Jamie Oliver, but his technique of placing the trimmed crackling on a rack above the roast while it cooks is very ingenious and brilliant.

I sent your video to my daughter. This recipe saved her life. She had the pork loin but didn’t know what to do with it & the dealings with her husband. Oh my! So Thank you for this recipe. This dish looks amazingly delicious. God works in mysterious ways. Merry Christmas.

I made it today for tonight's dinner and followed your recipe including making a mass when sieving the gravy 😂 - it was gorgeous - my husband was a bit suspicious about the vinegar, but also he agreed, that it was delicious - thanks for another great dish

This recipe is SCRUMPTIOUS! I just made it for the 3rd time. I never have the cracklin' piece though and it still works out great.

PLEASE believe anything this guy says!!! I had a date with this girl I really really liked; she finally gave me a shot, and i wanted it to be special, so I made this Pork loin, because i didnt have a lot of money, nor do i know how to cook at all. I went to youtube typed in pork loins, and Mr. jamie popped up assisting me on how to prepare this pork loin, and the female loved it. She loved it much that she's texting me a lot more than she was before, and wants to make a special night for me ;o) this time she's cooking, So thank you Chef Jamie Oliver you're pork loin got me the girl of my dreams.

This is the kind of food I want to see (and eat!) more of. Sometimes it's fun to complicate things for complication's sake, but ultimately it's a reverence for top-quality ingredients and straightforward (but effective) preparations that turn me on to food the most. I mean, it's roasted meat, beans, and greens. What's not to like?

I've done this now as my contribution to the family Christmas for 5-6yrs, everyone is just amazed at the flavour. I add chilli and a few more herbs too. Everyone is so used to the typical boring roast pork, this is a winner. If your crackling doesn't really crisp up once the pork is done, take the pork out and turn the grill on in your oven for 5-10mins.

I rubbed the pork in fresh rosemary and thyme with garlic and it took the recipe to a whole new level it was a punch in the mouth of flavour

Try and get the best balsamic you can afford. A good mid range one should do they tend to be sweeter and less acidic. It tastes so good though. Like if you prefer the crackling to the meat!? X

I've done of few of these recipes where he puts stuff directly on the oven bars; there is also a nice Moroccan lamb dish where he does the same thing. They are lovely recipes and the idea does work but when you are cleaning the the oven after you do ask yourself if it was really worth it.
