Lamb Shank Birria Tacos🌮 | Simple Easy To Follow Steps

Hey guys :) hope you’ve all been well! It’s about time I made some tacos on my channel. This time using lamb shanks which were slow cooked for a few hours.

Here’s what you’ll need to make this recipe:

1 ½ kg lamb shoulder & 2 shanks
(seasoned with salt & pepper)
10-15 corn tortillas

For the pot:
2 large onions
10 garlic cloves (peeled)
3 tomatoes
3 dried guajilli chilli’s (remove seeds)
3 ancho chilli’s (remove seeds)
3 bay leaf’s & 2 cinnamon sticks & 5 cloves
3 tbsp tomato puree
1.5-2 litres of cold water

For the tacos:
10 corn tortillas
Cheddar & mozzarella cheese (desired amount)
Coriander & diced onions (desired amount)

Step by step instructions..

1.) Start off by doing all of your prep, this makes everything easier during the cooking process. Chop up the onions and tomatoes then peel the garlic cloves. Follow by removing the seeds from the chilli’s and set this all aside.

2.) Follow by washing the lamb with cold water and pat dry with a paper towel. Then follow by cut slits in the lamb (this allows the meat to cook thoroughly especially with thicker pieces). Once this is done season with salt and pepper I use around a tbsp of each.

3.) In a pot add in 100ml of olive oil and allow it to heat up for around a minute. Once heated add in the lamb pieces, depending on the size of the pot you can add them in all at once. I added them in 2 pieces at a time. Cook on a high heat for around 4/5 minutes. The reason for this is to allow it to have a nice sear and colour on the lamb.

4.) Once this step is done, it’s time to prepare all the ingredients going into the pot. Remove the lamb from the pot and follow by adding in 5 tbsp of olive oil and allow it to heat up again for a minute. Once heated add in the onions followed by the garlic cloves. Cook together on a high heat for 2 minutes before adding in the tomatoes along with the dried chilli’s. Cook together for an additional 5 minutes on a high heat.

How do you know when cooking the curry is done ? Like ive been told to ‘bhoon’ i.e cook the curry such that the oil separates from the ‘salan’ is that right ?
