I'm Mexican. Born and raised in Mexico. I endorse this recipe. To be honest, most modern Mexicans don't go through the trouble of making the tortilla from corn flour. We just buy them. Respect for this amigo who has now earned the title of "compadre".

I made birria tacos this week and I screwed up by not braising my beef properly. They meat wasn’t tender and a bit undercooked. I still made it work though, as the consume (sp?) was still spectacular and the beef could be flash cooked alongside the tortillas just before I put it all together. Turned out super good, even after I botched the recipe. You can’t go wrong with these.
