God is not the bad guy. The real issue was that the cost of the knowledge is too great. Would you give a little child a lorry or a truck to drive and argue that you want that little child to learn how to drive? At what cost? How many lives will be lost? How much property will be destroyed? The sin of the watchers was not caring about the consequences of the knowledge they gave to humanity, hence why there was a lot of bloodshed and destruction of property recorded.

Before the watchers came down to earth to have relationships with the women, they knew there would be consequences of giving birth to the Nephilim. But they didn't care about the consequences of giving birth to the Nephilim. They swore an oath to that effect. As you see, the sin of the watchers is not caring about the consequences.

God has made a path for humanity to ascend and be enlightened that's dependent on freewill, knowledge alone isn't sufficient to achieve such a state. The watchers brought knowledge absent the ethics of its proper use, and without an ethical foundation an enlightened society isn't possible. Despite having a perfect understanding of what constitutes good and evil, the watchers knowingly did evil. I suspect they coveted not our women, but the grace God has given us in light of our many mistakes. By destroying the boundaries between angel and man through procreation the watchers likely believed they to would be given such grace and thus free of the responsibilities that come with existence, and there by be gods within their own right. This would mean they get to define good and evil and thus what is or isn't ethical, for if they saw God as a tyrant then they likely thought its through power such things are defined. However it's God's mear existence that defines the boundaries between good and evil, which aren't arbitrary concepts that have no bearing on existence, because they're the very thing that permeates existence itself. Evil corrupts and destroys, Good creates without error. Their actions condemned them to live in the destroyed reality they rot. God's intervention saved us from being dragged down into a world of their destruction.

My 21 year old self would agree with your synopsis but at 43 I've learned that man if left to his own devices will only entangle himself in his own web of mistakes and end up looking for God to help correct his path. There is nothing wrong with submitting to the one who created us and our rebellion only exposes the adolescence thinking in our evolutio.
