I actually went to Hachikyo a few years ago while visiting Japan. Thought I could handle the tsukko meshi… but I left literally five grains of rice in the bowl. I was full to the point of pain. The waitress came over, looked in the bowl, and just shook her head. I got fined on the spot. It wasn’t even about the money—it was the shame. Everyone in the restaurant looked at me like I disrespected their ancestors. I still think about it every time I make rice at home.

This was definitely the dish washer's idea

People, there has been a mistake in this video. Hachikyo only does this for this one specific dish, the finest salmon roe rice bowl. Yes, there is an agreement and fine for it, but as I said, it is only for this dish. Just order something else, and there wont be any fines.

I hate to tell you this, but salmon roe is collected when the fish are at the river mouths, not out at sea

Chef spilt some rice when he was cooking

With that logic, they should shut down to save the fisherman

"its not about money, its about respect."
Yeah but i paid for it. Respect that.

Yeah because paying an additional fee will definitely go to the “fishers at sea” 😂

Rice isn’t grown at sea 😆 Making your point rather useless. Yeah, the fish and the eggs are, but the fine also isn’t due to “respect” it’s due to a power trip. Thousands of restaurants give out scraps, and Japan is known for their healthy eating habits, so not finishing food is a common thing

That why in America we’re allowed to take our cook food to go in a bag when we’re done eating so we can finish it later 😂
