My daughter and I love this video! She just turned 12 on the 20th of Feb. she couldn’t decide what she wanted for her birthday. Now she told me we have to make this and try it out. I agree with her!! 50 years ago when I lived in New Orleans we would stuff the eggplant with shrimp and crabmeat. My in-laws were Cajun and the best cooks on earth! I'mmagonna make some stuffed eggplant this week-end! Have a great day...

I have been to several restaurants around the world and I can tell you that I have a system that tells me how to turn restaurants into family.
I make my reservation, order a drink and appetizer, ask to speak to the chef, watch the orders come out of the kitchen and if the chef comes out and speaks to me with pride and experience I'll then give my order. This will ultimately cause me to return several times per week with new customers and they bring in new customers. I'm so loyal to those restaurants and then I feel like friends or family members are feeding me. Chef JP, you seem to be one of those wonderful chefs! Therefore, I'm loyal to your channel and refer your videos out to other people and especially chefs.

If anyone ever invents a time machine, one thing definitely on my list would be to go back to when you had your restaurant so I could make a reservation, and I would book a flight from the UK to visit and experience your amazing food. But this channel is the next best thing and it's fantastic, the only difference is I have to cook the food myself and it brings me great joy and great knowledge doing it. I learn new things every week watching, thank you 🙏

I hate to cook. Seriously! I do not enjoy the process. But! But I love to cook with you, Chef! I started to follow you when I made my first tiramisu cake. I like your approach and way how you explain the process. I love your voice and jokes. I feel very comfortable to repeat your recipes and listen your voice on YouTube. This looks amazing! I grow my own eggplant because I love making it so many ways: grilled, caponata, parmiagiano, as lasagna, dip, in tomato sauce over spaghetti, tossed with other veggies in the frying pan, but my favorite is grilled ratatouille. I have never stuffed it, and I do love sausage recipes... Can not wait to try it! 😋😋😋 Learned a few tricks watching here how to prepare it, too. 👍

I recall the first time eating ratatouille in a nice restaurant... it came with my protein choice. I raved about how delicious it was and asked the servers about it. I raved+ so much about it they brought chef (whom was French) out and I complimented him. To this day, it was THE BEST vegetable dish I have ever eaten in a restaurant... and that was in the early 70's. Memorable!

Funny thing: I’ve noticed other cooking channels “learning” from Chef too! Emphasizing the importance of “Mise en place” and when to season and how to cook garlic: add at the END and only until “fragrant, ” then add stock! Thanks for making all of us better!
