Hello There Friends, today I demonstrate my twist on an Eggplant Parmesan! I will show you how I made it for all of my students that came to my Cooking School and absolutely loved it! I'm sure you will love it too! I will be transforming your traditional Eggplant Parmesan into an Eggplant Parmesan PIE! No crust needed and I'm sure you have all the ingredients available to you, come make this and let me know how you did in the Comments!

You know, Chef... I'm 57. AND a lover of all things - Eggplant! (Parmesan, Spaghettoni, Remoulade, Coulee, etc...), you name it. WHO KNEW! Well, I guess you did, Sir. My mind was blown. I just made a bunch of Ragu last weekend that I think would be PERFECT with this recipe. I'm pulling some out of the freezer tonight and making it this weekend. Beautiful piece of Italian creativity. Well done, Chef. And thanks for all you do for your "fwends"!

Let’s goooo! When I was younger, both my parents used to work and my neighbor used to babysit me. She is a WWII widow from Italy and she trained me on classic Italian dishes. This dish reminded me of her, Thanks so much Chef! #MoreOnyo

As an italian who *adores* parmigiana, i absolutely want to try this recipe! And for a tastier flavour, you can always add a layer of baked ham between the eggplant and the tomato sauce... I promise it will taste delicious!

Whenever I make eggplant parm, I don't layer it because I like it as a top or side with pasta, not a casserole. But this. Looks. Amazing. I want this every day of my life.

Mom made almost identical dish as a casserole. Sometimes with yellow crook neck squash. I'm in the nursing home and not allowed to cook. The *quack* they serve is not very palatable. When I watch your cooking I can smell/taste the flavors like mother did it. Thanks so much. 😊
