Double Chocolate Banana Bread (with OATS)

These healthy double chocolate banana bread made with oat flour only, sweetened with maple syrup, quick and easy to make. No refined flour, butter, oil or dairy.

INGREDIENTS:
* 1 1/2 cups (180 g) oat flour OR grind rolled oats
* 1/2 cup (60 g) cocoa powder
* 1/4 teaspoons baking soda
* 1 teaspoon (5 g) baking powder
* 1/ 2 teaspoon fine salt
* 2 eggs
* 1/3 cup (70 g) olive oil (extra virgin)
* 1 1/4 cups (320 g) mashed banana about 3 medium bananas
* 1/3 cup (113 g) maple syrup
* 1 teaspoon vanilla extract
* 1/2 cup (70 g) chocolate chips + 2 tbsp for decorating

INSTRUCTIONS
1. Preheat oven to 400F (200 C). Line a bread pan (8x4 or 9x5 inches) with parchment paper, or lightly grease with cooking spray.  Set aside.
2. Mix dry ingredients. In a big mixing bowl add oat flour, salt.  Sift in cocoa powder, baking soda and baking powder, and whisk until the mixture is evenly combined.  Set aside.
3. Mix wet ingredients. In a separate large mixing bowl, whisk together the eggs, oil, mashed bananas, maple syrup, vanilla extract until evenly combined. 
4. Fold the dry ingredients in with the wet ingredient mixture, and stir until the mixture is just combined.  Add chocolate chips and stir again.
5. Pour the batter into the bread pan and spread it out evenly. Let the mixture sit for 5 minutes.
6. Bake for 30 minutes at 400 F (200 C) Don’t open the oven!, then reduce the heat to 325 F (160 C) and bake another 15-20 minutes, until a toothpick inserted in the center of the bread comes out clean.  Remove pan from the oven and place on a rack and cool completely.

Just tried it without any sweetener. 326g of peeled bananas and an extra egg to replace syrup. I also used exact amount of butter instead of oil and the cake turned out very fragrant, moist and yummy!

I loved this! But I did not add any sweetener at all, just used very ripe bananas and it’s sugary enough :) thanks for sharing! Ah I added one more egg coz I skipped maple syrup.

Im gonna try this too, , normally have an oatmeal recipe of almost the same ingredients without the chocolate, , instead i added plenty of nuts, chia seeds and flaxseeds, , its so filling, , it can stand hunger till until 3 and its been my breakfast eversince and its easy to make, , yours looks irresistible, , definitely try this too with plenty of nuts!

Hi, thank you so much for this recipe!! Its a rare one that I could bake without making any “healthier” substitutions, hoping to figure out if it would even work 😂 It’s a big relief because I’ve been kind of failing with oat flour recently. I used to use spelt flour in everything but rn I have to cut it out for some time. So it almost looked like there’ll be no baked sweets for me anymore. But yay!!! Found this recipe last night and tried it today, turned out perfectly! I’m so glad!!!
