I made these last week and all of the different cookie recipes, these come closest to tasting like cookies you make with all purpose flour. They are crunchy on the outside and taste really good. I love how simple the recipe is! I'm going to add some Lily''s caramel chips in my next batch just for fun.

I liked the outside of these, which were crisp, the interiors were solid, not overly soft, but not what I could call crisp like their perimeters. I did a test cookie with an initial flattening and the 5-minute flattening, and one with just a 1/4" flattening and none after 5 minutes, couldn't tell the difference. I also baked them for the full time, took them out of the oven, turned the heat down to 250 and put them back in to dry for another 20 mins, which helped with the outer rim crispiness, but the centers still remained pretty much the same. Might try flattening them to 1/8" and twice-baking them at lower temps. Really want to get a crisp cookie! Good flavor on these. Definitely will make again, crisp or no crisp. Might try some protein powder and less coconut flour to see what happens with the crispness.

I just made this recipe, except I added half a cup of chocolate chips for my husband. They are wonderful! I also put half of a pecan on top of the cookie before I pressed it down after the first five minutes in the oven.
