When do you exactly put the flakey salt on them afterwards?

I appreciate the part when he explains in detail about what oil he uses. Thank you.

When using a wood cutting board or table you should always oil every surface. That prevents warping not putiing it on the side. Also you don't need to use as much as him. Because it is suggested to wipe any excess oil off after 15m and to let it dry for a day or two.

Old school ways were to wash with table salt and lemon juice. Between those two things, they will kill just about any germ. As for oil treatment, I prefer walnut oil. My main source is the Doctor's Woodshop. He is a chemist. My association with him is that I am a satisfied customer, and use his oil/wax mixture on all of the wood bowls I make. His story about the traditional use of mineral oil on the butcher blocks is that after cleaning the block at the end of the day, they would wipe it down with mineral oil. This would provide an impermeable surface barrier, so nothing, like germs would soak in overnight. In the morning, they would scrape the block down and start working again. The thing with mineral oil is that it never cures or hardens, so it soaks in and that is all it does. The walnut oils will do this, but it takes a week or so to cure. Bees wax is another addition to a lot of mixes for wood products that are intended for daily use. It is very soft and provides no protection for anything soaking into the wood since it is so soft. The Doc has carnuba wax added to his oil, which is very hard and offers a lot of protection. He suggests to use a heat gun for the final soaking. This lets the oil and wax penetrate in deeper. The walnut salad oils are not quite the same, and some work and some don't. I do stand my boards up on edge for drying after rinsing off over the sink. Some times metal stains can be removed or at least lightened by putting drops of concentrated lemon juice on them. Best if you can catch it right away. If it has been on for a while, it can take several applications. No, you can never sand them out....

"Why I oil my cutting board, not my food"

I feel like it needs to be specified that you use food grade mineral oils for this. If you use vegetable oil you will ruin your board

I used to work in a woodworking shop. Made cutting boards and stir sticks and the like. We would usually seal them with Tung or Linseed oil. Gets deep in the grain and solidifies nice. They're both food safe once fully cured, although I know one of them wasn't while wet...

Anyway, if they start to show age and need a resurfacing? I'd suggest one of those as a first time finishing oil for the new surface. Just keep wetting it until it can't drink up no more and give it a couple days to set up. Might have to put the board up on a couple rails so you don't glue it down to the butcher block.

Wait, you scrub your boards with soapy water. Then just wipe them down without rinsing the soap off? Why?

Use mineral oil for wood cooking utensils. Its a dollar or two at walmart. Don't fall for the expensive specialty oils

All steel is carbon steel, he means high carbon, as opposed to stainless steel or other alloyed steel. His knife has no chromium or anything to protect it so he oils it to prevent corrosion.

I do furniture building and refinishing. And my mom's one hell of a cook! Season your boards with hemp seed oil, amazing difference 😁
