So....because I live nowhere near a good place to eat serious Chinese food, I was inspired by your videos (about Xiaolongbao) to MAKE them. It happened, tonight, complete with black vinegar and ginger dipping sauce. yummy!! Thank you, from the bottom of my wee, tiny heart, for introducing me to this--and other--amazing, honest to goodness Chinese dishes.

I do exactly what they say not to. I put the whole thing in my mouth, but I just wait until it's a reasonable temperature first. I like this because I get the soup bursting out in my mouth. I just dip the outside of the dumpling in some vinegar in my spoon first, and lay a strip of ginger on it.

I really wish there were more authentic Chinese restaurants. Seems the only time you can get one though is in large metro cities where there is a large Chinese population. I understand why that is, but I can't help but be disappointed by the fact that Americanized Chinese is on every corner while the real stuff isn't popular enough to be given a chance.

For some soup dumpling places i've been to, they actually dont seal the dumpling up completely at the top. They leave a tiny little gap at the tip where the edges meet, perhaps for the steam to escape. And then you dont have to bite the skin to get the soup. You can just suck it from the tiny little gap. Burns your tongue at first, but it is so worth it.

Hey Mike I saw a youtube vid once of Eddie Huang, some celebrity chef, where he let the soup dumpling sit on the vinegar and leaves it there to cool before eating, I like this method because the dumpling casing becomes slightly chewy and you can enjoy the soup and the meat inside altogether rather than eating the two components separately. So I dunno sounds like a good idea.
