There is a magical minute where the soup is just at the perfect, still hot yet not lava temp where you can eat the whole dumpling in a bite without second degree burns, and it is divine.

My fav way so far after trying out all the "ways" is Eddie Huang's. Let it cool in the vinegar ginger tray for a bit and then just pop the whole thing in your mouth. The way the soup fills your mouth is amazing.

A Chinese guy who opened a dumpling restaurant doesn't even now that "long" (笼) in "xiaolongbao" (小笼包) stands for "basket" and not "dragon"???

xiao long technically means small basket, as in the bamboo basket that the dumplings are steamed in. basket and dragon sound the same but are spelled differently

The name 小笼(xiao long) doesn't mean little dragon, it just sounds like it, but it's a different character (dragon is 龙), it means little basket, and usually when you order them, you buy it in basket, the standard is 1 basket = 8 小笼包. Also, you NEVER use soy sauce for it, in the region where it's from, you will only ever find 2 things on the table: black vinegar and chili oil, soy sauce is used for cooking, not as a sauce.

But yea, reason why you don't eat everything is because it's too hot, most people where it's from (Wuxi, not Shanghai), they eat it sideway, bite slightly into it and suck a bit of the juices (it's technically not a soup either), but never all of it, because you want to save some of it for the final bite, to have with the meat. Also, pouring into it is considered strange, just dip the entire thing in your sauce, it adds the same flavour as if you pour it inside, and it's less troublesome... it's just unnecessary.

Din Tai Fung is SUPER POPULAR HERE so anytime I get to go have dumplings, I'm on it! What I do is get a bit of my soy/vinegar mix into my spoon, put the dumpling on, break the dumpling (like he does) so the broth can cool down, and then eat it in one bite. :) That way I can enjoy the sauce, broth, and dumpling at the same time without burning myself!
