TBH, This is one of the more reasonable things you've done on the channel. It would make sense to eat the onion too though.

slow cooking is the way to go here. Like 225 until it reached 138f internal temp, then wrap in foil and let rest until it comes up to 141f.
then you collect the juices and onion, cut it up, and cook it in the pan you seared the steak in and deglaze it with some red wine for a nice pan sauce, and mount it with butter. Serve the sauce on the side with some fries or a baked potato so you can use the majority of the sauce there. The steak won't need it.

Lowkey, this is actually a real culinary technique onions are actually one of the best tenderizers and break down the enzymes of proteins like no other

Usually you dice and cover it with onion, but this way obviously still works

you made something we made as a " robbers roast " in family gatherings, its a sand pit you burn a big old fire in and then bury the meat and veggies in foil wraps and come back after 15 hours, and dig it up. sometimes its a whole cutted hog thats cooked that way
and i remember as a kid we got big old onions and we guted them and put beef cuts inside and wrapped them up.along with potatoes and such, so each "bag" would be a compleat meal, it had like potatoes carrots and turnips they where seasoned with herb butter, and then there was the onion with the steak inside it. and whole thing was wrapped in foil and dumped. in to the pit and covered with sand and hot coals kept over it

My dad actually does chicken drumsticks like this. Also rubs them with dried mushrooms and other stuff. Very good.

FYI for all watching. When you cut ANYTHING, cut away from your body as in, the blade isnt facing you.
