RECIPE:

INGREDIENTS:

4 cups cream
6 egg yolks
1 cup of sugar - divided
1tsp of vanilla essence

METHOD

Preheat the oven to 350 degrees fahrenheit or 175 celsius.

Place the cream, and vanilla in a medium sized saucepan and bring to the boil over a medium temperature. Set aside to cool for 15 mins.

In a medium bowl whisk together the egg yolks and half of the sugar, beat until light in colour.

Add the cream 1/2 a cup at a time to the egg mixture, whisking it together.

Pour the liquid into the ramekins, and stand them in an oven proof dish. Pour enough water into the pan to come up halfway up the sides of the ramekins.
Bake the Crema Catalana for 40-45 mins until just trembling in the middle. Leave to cool and store in refrigerator.

Before serving add a spoon on sugar to the top and using a torch caramelise the tops until golden brown and once cooled the sugar should harden.
