Awesome, only 3 ingredients (truffle is optional), pasta, butter and Parmigiano Reggiano. I would add some freshly ground black pepper too. Anyone can do it at home, so just give it a try! Remember to buy a good quality butter and a real Parmigiano Reggiano (most important ingredient) aged for at least 24 months. It will blow your mind

I'm from Rome (rise and born) this is the pasta we eat when there's nothing left in the fridge or when we want to have a "light" lunch. We call this recipe . Pasta burro e parmigiano.

I used to make this for my older sister when I was a kid (sans truffles because we were poor). I'd add crushed garlic and a bit of crushed red pepper too..

Guys please, im italian this dish is what make my mother (without truffle) when i was sick, it's call "pasta al burro" or "pasta in bianco" is tipical dish for little guy or when the stomach hurt but you got to eat something

When chef Alfredo di Lelio first invented Alfredo sauce, the suace he had been trying to make was something else but he accidentally used too much butter and but he thought it looked really good and tasted it and he loved it so much that he named the dish after himself and served it in his restaurant. It’s kind of a famous story among chefs and the moral of it is that if you make a mistake on a recipe, and it looks appealing, you should try it because it maybe the next Alfredo sauce.

just to make it clear, Alfredo made it famous all around the world, but pasta with butter and grated seasoned cheese is the normal way of flavoring pasta from medieval times up to 20th century .
