Love the honesty. This is a family restaurant, not a fine dining establishment. As a professional chef, I guarantee you, 99 of a 100 people could never tell par cooked pasta from freshly cooked. If it's done right, of course.

Dry pasta takes forever so you precook it and portion it up. Fresh is quick enough maybe 3-4 minutes but not ever restaurant has a 102 year old Italian grandma making fresh in the back

I've been in multiple restaurants for 15 years now 3 of Which are traditional Italian all serving between 90-300 people per day never not used dried pasta and always cooked in advance its not possible to cook a la minute for that many looks good 👍🏴󠁧󠁢󠁳󠁣󠁴󠁿
