If you want crispy mushrooms throw them in a cold dry pan, turn to medium/high heat and let the water evaporate. Then hit with some oil/butter and you’ll hear the sizzle instead of a hiss

I'm like you dried to maximize flavor, you should try Reactivate in them by soaking them in water and salt and try this with lilte amounts of water and salting vegetables wait 3 hours with salt on them than use the air fryer than when add water for one hour or use as a brine or use the vegetables after in water for one hour as a stir-fry
