🔵Recipe: The Creamiest Roasted Beet Hummus
INGREDIENTS:
2 - 16 oz packages of cooked chickpeas
2 garlic cloves
1/3 cup olive oil
¼ cup tahini
1 lemon, juiced
1 beet
Salt and pepper, to taste
DIRECTIONS:
1. Prep Beet | Preheat oven to 400°. Cut part of the stem off of the beet. Leave the rest whole and leave the skin on. Place in a baking sheet, cover it with 1 tbsp oil and salt. Be generous with the salt, it helps the beet cook and we will peel off the skins and most of the salt later.
2. Roast Beet | Place the beet in the oven for 35-45 minutes depending on the size of the beet. A fork should be able to easily poke into it when it's finished. Turn it over half way through.
3. Peel Beet | Once the beet is finished cooking let it cool, cut off the root and the stem. For a super creamy hummus, peel off the skin by running it under cool water while you peel off the skin. OR -to save time and create a different flavor -leave the skin on plus you will be wasting less food and getting more health benefits.
4. Peel Chickpeas | Here's how you make it the creamiest ever. Peel the skin off of each cooked chickpea. Get rid of the skin and only use the inside.
5. Blend Hummus | Add all of the ingredients, including the beet, to a food processor and blend!
🔵 Recipe: Beet Hummus Baked Cauliflower
INGREDIENTS:
1 medium head of cauliflower
Garbanzo flour, 1 cup
Bread crumbs, 1 cup
Onion powder, 1/4 tsp
Garlic powder, 1/4 tsp
1 c Beet hummus (find the recipe on my website)
Olive Oil, 1/2 cup
Aquafaba, 1/2 cup
Water, 1 3/4 cup
DIRECTIONS:
1. Add all ingredients, except the cauliflower, into a large bowl. Mix until a batter forms.
2. Cut cauliflower into florets. Coat them in the batter and place on a well oiled baking tray.
3. Bake at 400 degrees for 25 mins or until crispy.
4. Serve with your favorite dipping sauce and enjoy!
