RECIPE (3-4 servings, 15min prep time):
-1 onion
-5 cloves garlic
-1 chili
Chop everything and fry in some oil for a few minutes.
-1 can (400g) chopped tomatoes
-salt and pepper to taste
-a pinch of sugar
Let it simmer while cooking 200g pasta.
Stir in the pasta, pasta water and parsley.

Love this recipe! Have you tried replacing the sugar with an old carrot? If you let a whole carrot simmer in canned tomatoes, the natural carrot sugars release and the carrot takes on some of the tininess -- and voila! A sweeter sauce, and some old produce used up (I toss mine in the compost after, but I suppose it could be a weird snack lol)

This is exactly how i always make my pasta, also if you blend it after roasting the veggies you get a creamy sauce 😋😋 then add pasta to it... Absolutely delicious

Somehow I never got any pasta with parsley in Italy, mainly basil. I prefer basil as well as it’s very aromatic. This pasta is one of my favourites as I love spicy :)
