**ANYONE PLANNING TO ACTUALLY MAKE THIS PLEASE READ THE RECIPE BELOW, I REALISED I MISSED A VITAL TEXT IN THE REEL TEXT**
A few years ago I got the opportunity to visit Israel and I have to say, hands down that the hummus I ate there was the best hummus I have EVER eaten in my life.
I have always tried to recreate hummus but could never get it right! I always used to make hummus with olive oil, but recently I have learned that olive oil is not the key to amazing hummus.... It is actually chickpea water!!!
So here is what I do....
• Soak 1lb of dried chickpeas over night.
• The following morning transfer chickpeas to a pan and top up with some water. Bring that to a boil then simmer for 1 hour. Allow to cool slightly. Set aside ¾cup of the chickpea water for later.
• Add chickpeas to a food processor and 4-8 cloves of garlic or garlic powder and blend until the consistency is a thick paste.
• Whilst the food processor is still blending add in ¾ cup of tahini, ¼ cup of fresh lemon juice and the ¾ cup of chickpea water you set aside earlier.
• Once you can see the consistency is smooth add your seasoning. Cumin, salt and pepper. I never really measure this I just taste as I go.
