Not trying to be a Betty Bummer here, but there are a few really mistakes in this that can ruin the beans. First adding salt while cooking will make the beans tough. The chicken broth, even low sodium, has tons of salt. If you want chicken flavor, try just adding chicken. Next, Any kind of acid or vinegar during cooking will also make the beans tough. That means no tomatoes, no hot sauce, and no salsa. Honestly beans don't need any of this stuff. Just do water, onion, and garlic.

It's best not to salt the beans while they are cooking. Once they are done, you can certainly try them and season to taste. Enjoy!

Big problem with not soaking the beans. That Formica acid is still in them. Also, no lard? Meh.

Bionicpope, it doesn't sound like you tried this recipe at all. You replaced almost everything therefore creating your own recipe, not this one, so if disappointed then in all respect - it is your recipe itself that you are disappointed in not this one...

Can these beans really be fit to eat if they're not cooked with smoked ham hocks? I do seriously doubt it

I just tried this, I replaced the beans with spaghetti, onions with squash, and the jalapenos with chicken stock. Didn't really have any spicy kick, or anything. Kind of disappointed. 1 Star.
