Cowboy Chili Recipe!

We’re taking the chill off in the kitchen today with our Chili recipe. What’s great about chili is you can substitute any kind of meat whether is ground beef, wild game or even chunk meat. We’re giving you a great seasoning base and some ideas for your chili and from there you can customize to suit your tastes. Beans- no beans… hey I like a bean to give it an even heartier feel. So we hope you enjoy our chili recipe!

Cowboy Chili

2 pounds ground beef (wild game, chunk meat, etc.)
1 large yellow onion, chopped
2 (10 oz.) can Rotel (we used chunky), drained
1 Rotel can water
1 (15 oz) can tomato sauce
1 (16 oz) can kidney beans, drained (or your bean choice)
1/3 cup chile powder
½ tsp cumin
2 tsp oregano powder
2 tsp paprika or smoked paprika
2 tsp salt
3 tsp minced garlic

1. In a large pot or 12” Dutch oven brown the hamburger over medium high heat. Season with salt and pepper or seasoning of your choice, to taste. As the meat begins to brown, stir in the onions. Continue cooking until the meat has fully browned and onions are tender. If there is a lot of excess grease, drain.

2. Stir in the Rotel, water, tomato sauce, beans, chipotle peppers or relish. Stir in the seasonings. Adjust taste, if needed.

3. Cover and cook over medium-high heat until it reaches a boil. Boil a couple minutes. Reduce heat and simmer for about 40 minutes, stirring occasionally.

4. Serve warm with cheese, onions, sour cream, etc.

I work at a middle school and we did a chili cook off. My family convinced me to make your recipe and enter it (they love your recipe and always want me to make it). So I made it and entered and won first place. So in a couple of weeks I have to work in a concession stand for two days. Our building principal asked me to make the chili so we can sell bowls of it for the event we are having since they loved the chili so much.

Guess what Kent? I competed in my school’s chili cook off today, used your loving recipe, and I won first place. The on ingredient I didn’t have was your spicy relish, because I didn’t have time to order it, prior to the date. Yet, all went well. Also, I made some cracklins cornbread to accommodate the chili. I wish I could send you the pictures. Yummy, it was I tell you. Thanks for sharing!🌹♥️

Me and my dad started making this recipe about 6 months ago and we haven't looked back. I'm eating a bowl as I write this and there's nothing like it. Perfect flavor, perfect heat. We put this on everything. Heck I might even put it in my coffee. Best chili recipe I've found anywhere. It's a part of the family now.

Ok, I completely lost it when he said, “self-cleaning oven”. LOL 😂😆🤣 Mr. Rollins has a great sense of humor. I just recently discovered his channel. I’m amazed how he can cook a variety of foods without the need of fancy gadgets or an ultra modern kitchen. Living a simpler way of life is better. Greetings from west Texas 🌞🌵

I remember my late mother kept her cast iron in the oven when not in use. It was a gas oven with a pilot light, which kept the oven about 85 to 90 degrees. She said it kept her cast iron seasoned and dry. Never saw a spot of rust on her cast iron, and she had a special pan for eggs, and they never stuck. I love cast iron cooking.

I just made this chili last night for my kids’ church youth group... and it was a hit! Everybody loved it. I’m so glad I doubled the recipe and held some back for me, my wife, and my youngest son because there was nothing left when I picked up the kids afterwards.

I found an old chili recipe in an Aunt Bee's Cookbook a while back when I was in the Navy in my early 20's. I thought it was so good that I adopted it as my own. I would make a big batch and invite my Navy friends over. They loved it. It is very similar to this!

I've used black beans with buffalo meat, white beans with chicken, pinto, red or kidney with beef. It's all good to me.
