It's sleeper cut & usually marbled nicely. It's even better when dry aged before trimming. Slow smoked indirect heat is one of my favorites.

Never seen a cut like that, I work in a UK butchery, mostly on sides and hinds, manually unloading 1500 quarters a day off trailers, sawing ribs, tomahawks, pistol with the disk etc. I cut and hang a good 350 or so 5-7 bone ribs a day as well as pushing 2-300 halves out from the chiller for manual swinging up and quartering which is my job every now and then too but I do a fair amount of primary fore cuts like blood meat, flank and shin tail before it gets handed to the boning line.
I’m not a Butcher but I have had a go at every cut we do and never seen this preparation before, it’s very interesting to see what other countries do with their carcasses.
My job is called rehang, we don’t actually rehang the sides anymore because we’ve hung them out straight for the past year but the name stuck after 40years lol
My employee number is 2434 and ive worked there 3 years, those are original numbers and now were on 6000 and something 😂

Man, I love a Denver steak.
I used to do hand cut steak sandwiches from whole chuck roll that I'd break down. I started calling it "poor man's Wagyu" and I'd usually save a little for my lunch.

They were super affordable a couple of years ago but like anything else, once people found out how good they are the price started going up. Denver’s were my go to for cook outs.

Nice cut! I did not know it. Will try to get it. One suggestion: I would sharpen the knife anywhere except for over the meat to avoid ingesting the fine metal coming off while sharpening the knife.
