This is actually covered in detail in the Darth Bane Trilogy: "Darth Bane: Path of Destruction". The book explains it while Bane is having difficulties in his training duels rising through the ranks at the Sith Academy. It is in-fact a matter of using the force to guard yourself from others using the force against you. It can be broken however if you are distracted and let your guard down. So it doesn't just have an on and off switch, you have to multitask in your mind and keep your defenses up actively to prevent others using the force against you.

I remember seeing something about this with Darth Maul and how he was able to fight Obi-Wan and Qui-Gon at the same time by clouding their senses with his dark side powers

In the Legends novel
Rise of Darth Vader
a Jedi fighting Darth Vader uses the force to switch off the buttons on his chest nearly killing him. From then on Darth Vader strengthened his personal Shields and also fought with his sabre in closer proximity to his torso core. Where is Anakin used to prefer a sabre higher held above the head.

Another very interesting explanation, for the lightsaber issue in particular, is that lightsabers activate with a button or switch but they stay active because pressure of a grip is kept on them at all times. This is why lightsabers always turn off when people drop them and why only force users can do a saber throw, because even in the air they must use the force to keep pressure on the grip to keep the saber lit

I always thought that there was more than just what we see on film; using the force to make your opponent itch, or sweat, something uncomfortable to distract them - jedi cage tech used by the mandalorians in dungeon ships to keep the jedi occupied enough to prevent them from doing anything else. In SWRPG D6, the -1D per action mechanic always kept my players locked into what appeared to be simple sword dealing, but at higher (10D+) levels, they could overcome opponents mentally while dueling.

I can't remember where I read it, but I remember reading one of the novels where it was brought up and someone mentioned that the focus required to manipulate a switch that may or may not be moving through the air to attack you is far more than is allowable when, you know, trying to fight someone who is trying to kill you.

@eckhartsladder I remember the force barrier being talked about in the Jedi Academy trilogy. Luke was dueling with a student and he or his student tried to reach out with the force. They found what appeared to be a weak spot at the back of the other's head, and thrust in with the force. A natural defense kicked in and flung the other person away from them.
I believe this was the second book, Dark Apprentice.
