My wife and I used to make Philly omelettes. Steak, peppers, onions, and provolone. So delicious, y’all definitely should try it. Also I’m pretty sure my wife generally loves me more since I’ve learned to cook so thank you for that

I’ve always used a Lid while cooking Omelettes. Helps set the top on the eggs and melts the cheese. Love the content, Sam and the boys!

Omelettes are my go to for weekend breakfast. I've been putting pimento cheese with jalapenos in the middle with either chipotle seasoned grilled chicken or some ham. It's messy and delicious. Love seeing you guys in the kitchen again. I know you hate to hear it but the lighting is consistent, the audio is loads better and no one is bitching about heat, airplanes, or gardeners. Either way keep it up!

That looks like the All-Clad non stick pan. For those interested, All-Clad does sales every so often of factory seconds with small imperfections, usually on the packaging, I've gotten so much stuff there so much cheaper. I got two sets of those 8" and 10" pans for $40 for each set ($80 for 4 pans)

Sometimes to allow the top surface to cook without overcooking the bottom I hold it under the broiler in the oven for about a minute. Also, I have never been good at folding the omelette in the pan. When its done, I slide it out of the pan onto a plate, and flip half on top to complete the foldover. 👍

My go-to omelettes are chive and cheese or Western/Denver. Definitely have to give chili-cheese a try, but will have to make my own chili. Canned chili is crap

Just finished my omelette. It was a combination of everything for your three omelets. It had hash browns, chili, of course cheese. Jack cheddar, but it also had a big scoop of sour cream on top! Absolutely made the omelette. It had diced up onion ham, it had diced up green pepper, and for a little kick it had some heat from a habanero that was cooked with the onion and the green pepper. OMG it was amazing but it was your video that sent me off to making the most amazing omelette I think I've ever had! By the way five eggs just in case anybody was asking. Sam thank you for reminding me that I do like to cook and I don't always eat the same thing because of your videos!

These look great. I will say my favorite omelet to this day is my father's 'tail gate' omelet he'd make when we were on vacation. The first omelet kind of reminded me of that except replace the chili with spagetti sauce, the american cheese with ricotta. Also included was bacon or sausage and grilled onions. It worked surprisingly well.

I worked at a greasy spoon breakfast spot all through high school and some college (about five years of making omelettes everyday) and there is one thing Sam is doing different (I didn't say wrong lol). This applies to all omelettes, but in particular you can see it on the first omelettes here. He put the eggs in and then folded the edges and let the eggs run to the edge of the pan. THAT is the reason his omelettes keep breaking when he folds them, because the middle gets over cooked on the bottom and under cooked at the top. The best way, IMO (and I've cooked thousands of omelettes, maybe tens of thousands) is to tear the middle parts with your spatula and let the eggs run through that way, not the edges. That way the egg fortifies and doesn't cook unevenly. The flip will just be east and it won't break apart. Anyway, just my two cents. 😄

I have never thought of chili cheese omelets, but I do believe it is a must try. The pepper change up in the Denver, aka Western omelette looked amazing.
